National Pancake Day Recipe

With National Pancake Day last week you might be tempted to give into your diet and hunker down on a nice stack of fluffy flapjacks, but with beach  season right around the corner we thought we’d give you a way to have your pancakes and eat them too-guilt free! 

Below is an amazing recipe for banana crepes made with whole grain oats, almond milk, and flavored protein powder that not only taste good, but is also good for you. Feel free to follow the recipe as described or tweak/add ingredients to your liking. 

Protein Banana Crepes

Prep Time: 15 min. Cook Time: 5 min. Total: 20 min.

 Ingredients

2/3 cup ground oats

2 scoops vanilla flavored protein powder

1 cup almond milk

1 pinch of sea salt

2 egg whites

1 1/2 tsp coconut oil

1 large banana

2 tbsp. sugar free chocolate sauce (we like Torani Sugar Free Dark Chocolate), but you can use whatever brand you prefer).

Directions

  1. Combine protein powder, oats, almond milk, sea salt, coconut oil, and egg whites in blender.
  2. Slice banana into 1/4 inch slices and set aside
  3. Pour 1/3 cup batter onto a greased skillet and cook over medium heat. When bubbles begin to form, flip the crepe and cook for another minute.
  4. Transfer cooked crepe to plate, vertically line the middle of the crepe with sliced bananas, drizzle 1 tbsp. of sugar free chocolate sauce over bananas, fold crepe and drizzle remaining chocolate sauce on top.
  5. Enjoy!

 

And there you have it, a quick, healthy, protein packed alternative to the standard flap jack perfect for National Pancake Day and perfect for your fitness goals! If you really want to get creative try sprinkling a few chopped walnuts and a dash of shredded coconut on top of the crepes or some of your favorite berries for extra flavor.
